So a while ago I blogged about trying to eat healthier. Well this was one of my attempts at making up a healthy recipe. It's quite simple really! You only really need about 5 things to make this and WAM your done-zo! (or as we like to say Done-zo Washington) You will need:
1. 1 Red Pepper (cubed)
2. 1 Mango (cubed)
3. Marinated and grilled Chicken Breast
4. 1 Avacado (cubed)
5. Blue Cheese or Feta Cheese Crumbles
Marinate your chicken for a day in honey dijon or lemon herb marinade sauce. Set your chicken on the grill while you cut up your fruit and vegetables. Soak you fruit and veggies in lime juice; pour mixture over grilled chicken and then add cheese. Salt and pepper to taste. Done, done and EAT!

This looks sooo amazing! and super easy to make! I had the mango salad @ Qdoba this wk & it was spectacular, so I'm sure I'll like this also! will have to pick up the ingredients today!
